CALDIO:
83 members: 66 men, 17 women
Founded on November 30th 2010, CALDIO have established strict control over their production process, enabling them to provide their members with stable pricing and income.
BASILIO:
33 members: 25 men, 8 women
This family run organisation is located in the town of El Cuaventeño. BASILIO operate in a similar manner to CALDIO, they achieve a high price at market to offer the growers much needed stability. Due to recent climate change, crop production can be unstable from year to year, fluctuating from a low yield of 50,000kg of production to a high 150,000kg
Processing:
The coffee is processed at the El Pantino wet mill. Here it is processed into parchment as a washed coffee. The outer pulp and mucilage is removed from the cherry is then dried on patios, it is rotated every half an hour to ensure even drying. Once is reaches the correct humidity it is stored ready to be taken to the dry mill where it is hulled, cleaned, sorted and prepared and bagged for export. Each lot is sampled, roasted and cupped before export.
